I’ve had the chance to eat a couple of flat iron steaks in the last year or so and have really enjoyed them — most notably, the flat iron steak that is sometimes available at Ray’s the Steaks in Arlington, VA.  Anyway, I finally got around to doing a search to see how the flat iron steak came to be.
